225g S.R wholemeal flour 1 tbsp honey or golden syrup
3tsp ground mixed spice 1/2 tsp almond extract
2 tsp cinnamon 50g mixed fruit
1 large cooking apple, unpeeled & coarsley grated 2 large eggs, lightly beaten
150ml mild or medium olive oil 100g flaked almonds, roughly chopped
75 xylitol or brown sugar 25g flaked almonds for sprinkling on top
1. Preheat oven to 150. Line a 2 lb loaf tin (I use 8" x 8" square tin) with baking paper
2. Sift flour, mixed spice & cinnamon together (tipping in leftover grains in sieve). Add in remaining ingredients, place in tin & scatter almonds on top.
3. Bake for 1 - 1 1/4 hours or until top feels fairly hard & mixture doesn't wobble (quicker in square tin).
